SPRING IS HERE

What a fun week we had. We had a fun family night with nelsons family about Jesus and decorated some Easter eggs. Then we went to the Cluffs to get Nick's baby brothers mission call. He is going to Spokane Washington we our so excited for the example he is. Then we had a nice calm weather weekend with Nick at home for once on Saturday. Then we celebrated Easter. The kids were so excited we had our annual spring breakfast. Everything has a different color with the help of food coloring. They were so happy with there baskets. We all went to church and the kids learned more what Jesus did for us. How lucky are we to get to live again. It helps put things into perspective again about what to do, what is right, and to do our part.
After church we had the chance to spend time with my family and have a Easter dinner and hunt. The kids love having cousins so close. What a fun time, I love having the Easter Holiday remembering everything our Savior did for us.

Some Yummy Salads

I made these two salads over the weekend with the Cluff party's and they both were gone before I could snap some pics. Here is the recipes for those who asked. Things that call for fatty dressing and stuff I would use no fat.
Creamy Pesto Salad
INGREDIENTS:
Creamy Buttermilk Dressing:
1 large garlic clove, minced
1/3 cup mayo
1/3 cup sour cream
1/3 cup buttermilk
3 tablespoons red vinegar
Mix put in fridge
Pasta Salad:
2 tablespoons salt
1 pound bow tie (farfalle) past(at target)
8 ounce Asparagus, cut small
1 pound cooked chicken, bite size
8 ounce cherry tomatoes, halved and salted
1 can artichoke hearts, cut small
3 green onions, thinly sliced
1/2 cup pine nuts roasted, until golden
1/4 cup pesto ( store or homemade)
Cook pasta and salt, last 1 minute put in asparagus (Drain don't rinse) put on cookie sheet to cool set aside.
Place all other ingredients in a large bowl add noodles toss, Can be refrigerated for several hours, When ready to serve add the dressing toss again then enjoy!!
Chicken Zesty Salad
1 pound cooked chicken, bit size
1 bag salad
1 bag dark salad
1 large tomato, chopped
1/2 to 1 bunch of cilantro, chopped
1 can whole corn, drained
1 can black beans, rinsed and drained
mix all together in large bowl
1/2 cup ranch dressing
1/2 cup barbegue sauce
mix up in dressing bottle
When ready to serve put dressing on and then add:
1 can french fried onions or baked tortilla chips(I used chips) toss
And Enjoy!!!

FOR SALE


The sad day has come we put the house up for sale. It has been longer then we had thought we would stay but it's time to get moving. The house will probably be for sale forever because all of the homes for sale but we are in now hurry. We sold our land in Logan. It was a very sad day but we had to do what is right for the right now. We will still live in the same neighborhood so our kids are glad. But I'm going to miss our landscaped yard but it is fun to start over too. So i have to keep the house looking sharp all of the time a little bit of a stress. It's so nice to have a husband that can build us homes. I'm very grateful for that.

Swimming Lessons

Well I put my kids into swimming lessons early,because I worry about all the crap in the pools. It still is a little scary I'm afraid of it all. But hopefully doing it before the summer they won't get anything. I love to watch them learn how to swim way important. So I don't loose my head when I take four young kids to the pool. And my husband thinks he is going to get a boat, one of these days. Me and Kate just hang out by the side of the pool or go walking on the track. I love having a city center so close it makes these activities easy.

The computer Melt Down

Well I haven't been able to write in a along time because our computer has a virus. So I'm writing this at Nick's mom house. I have so many stories to write but it stinks with out a computer I hope to have it fixed by this week.
